Château Valmont sits near the Bages ponds in Peyriac-de-Mer, between garrigue scrubland and pine forest on the Languedoc coast. The estate was acquired in 2016 by the Ruhlmann-Schutz family, the same third-generation Alsace family behind several of David's Wine Cellar's other bottles, who wanted a southern counterpart to their Alsace whites. The property has grown to 30 hectares, certified organic since 2020, with clay-limestone soils and sea winds that bring humidity and freshness to the fruit.

This 2025 bottle carries the Corbières appellation, one of the Languedoc's largest and most historic zones for both reds and rosés. Made from a Grenache and Syrah blend, grapes are hand-picked at optimum temperature, sorted, and pressed directly before a traditional stainless steel fermentation with careful temperature control. Expect a pale, clear rosé with a floral, fruity nose and real minerality, fresh and light on the palate rather than heavy or overly ripe.

The result is a bright, food-friendly Mediterranean rosé from a family already well known for their precision in Alsace, now applying it to the south of France.
