Champagne Pascal Walczak is a small grower-producer estate based in Les Riceys, in the Côte des Bar area of the Aube. The family farms about 10 hectares of vines, and since Pascal's son Sébastien joined the estate in 2003, the vineyards have been worked without herbicides. As a récoltant-manipulateur, the estate grows, harvests, and vinifies its own grapes rather than buying fruit, giving it tighter control over quality from vine to bottle.
This bottle is a Blanc de Noirs, made entirely from Pinot Noir under the Champagne appellation, France's most tightly regulated and internationally recognized sparkling wine designation. Sourced from the estate's own clay-limestone terroir, the wine is aged in tank before release and shows the citrus and yellow fruit character typical of Pinot Noir grown in the Aube, layered with the fine, persistent bubbles of traditional-method production. It's structured and expressive, with more weight and grip than a typical white-grape Champagne.
