Wine Description
This wine, issued with the latest Côtes-du-Rhône Village appellation, Sainte-Cécile is a very classic GSM (Grenache, Syrah, and Mourvèdre blend) with a bit of white Roussanne for added acidity and freshness. All the grapes are hand-harvested and undergo a thorough triage before being placed in concrete tanks with wild yeast.
It will mature at least 24 months in old oak barrels and then uncoated concrete tanks until its release. This full-bodied wine has flavors of cherry and blackberry that evolve towards roasted coffee. Well-structured tannins give it an elegant finish. Less than 10,000 bottles produced.
